This week for Foodie Friday…I am sharing two very, easy recipes for Summertime Sandwiches. Neither the ingredients nor the preparation and process are complicated. Even better…because who wants to spend a lot of time in the kitchen when “Summertime is Calling You?”

The above pic features a Turkey-Bacon tea sandwich with Roma Tomato Slices and a creamy Avocado-Pesto Mayo.
Avocado Pesto Mayo:
(1) Avocado – peeled and mashed
1/4 cup mayo
2 Tbs prepared Pesto
1/2 tsp lemon juice
1/2 tsp garlic powder
pinch of salt
pinch of pepper
Just mix all the ingredients together. Make this ahead of time and chill so all the flavors can meld together. Store in an airtight container, and add the pit of the avocado to the mixture to prevent it from turning brown.
To make a yummy sandwich…I would suggest using pita bread. Fill with deli roast turkey slices, add slices of roma tomatoes, some baby spinach leaves, drizzle generously with the Avocado-Pesto Mayo – and top with crumbled bacon. mmmm….
I made two flavors of tea sandwiches. The second one was a Curried Shrimp Salad. I used canned shrimp to get the mini-size shrimp perfect for tea sandwiches, but I would use fresh or fresh frozen shrimp, if available. This sandwich spread would be wonderful on a toasted baguette.
Curried Shrimp Salad:
1 pound shrimp, boiled with skin on (gives extra flavor)
– then peeled and cut into thirds
1/2 cup Mayo
1-2 tsp curry powder (depending on taste. I like a strong curry taste)
1/4 cup finely chopped red onion
1/4 cup finely chopped red pepper
(0pt) 2 tbs chopped fresh cilantro
1 tsp lemon juice
salt and pepper to taste
I would add a generous portion of this salad on a toasted baguette. (Lightly butter each side of the baguette after toasting to keep sandwich from getting soggy.) Then, add some chopped, toasted pecans and finally, top with bean sprouts.
Summertime Sandwich Delights.
Oh Good Grief! Sometimes I amaze myself. If you stopped by earlier this evening and saw that I had “joined” Marty’s Cloche Party – you probably soon discovered that I was one week early. (slap me silly somebody, please!) So, my apologies to Marty, and to anyone whom I caused confusion to. I will repost that section next week during the REAL cloche party. Duh! 😀

Barb, I love the sandwich recipes. They all sound so good. I love the avocado pesto. That I will definitely make. Now as for the Cloche party, it is next friday, but I love the idea that you showed so many wonderful ways to use them and your decorations are always perfection. I had to do a double take look at the calendar when I saw your post. I thought, it’s not the 19th, is it? Then I had to laugh when I realized you were a week early for the cloche party. Does the early bird get the worm? lol. At least you are early. I’ll probably be late.
Now about your food, looks pretty yummy. I may have to give the recipes a try. Who am I kidding? If it doesn’t come out of a jar, box or bag, it ain’t getting cooked at my house. It’s not really that bad, but close. Some day I really do need to give all you southern gals recipes a try. As you all seem to know how to cook.

These sandwiches look fabulous!! I like to make a little something between lunch and dinner in the summer because we usually grill later in the evening, so these look perfect!! And the avocado mayo sounds delish!! Your photos of the food are wonderful too.
Great lesson on cloches for me. I love the ones in the garden. Wow!! They must have a few to spare!!
I don’t have a cloche (sigh) but I am sure it would be a travelling cloche like yours. I’m always moving things around!
I won’t be participating in the party but I will be peeking in!!

Those sandwiches look divine. I just love anything with avocado in it, but LBeau hates avocado. He also hates asparagus, which is another of my favorites.
