Recently, I made one of my favorite
Summertime Soups - The Lazy Gourmet way.

Soup cooked in a food processor?
Can it be true?
Oh yea. And it's one of my favorite
Summer time soups.
Gazpacho.
Gazpacho is a Spanish-style soup
made with tomatoes and veggies.
Sadly, all of my tomatoes have finally
gone to Veggie Heaven. They were so
good while they lasted.
So, easy-peasy puddin' pie -
I substituted canned tomatoes.
(if you don't tell them, they will never know)
ssshhhhh....
Other than fresh veggies, you will also need
red wine vinegar, lemon juice, sugar,
tarragon, basil and salt and pepper.
While I was chopping my veggies,
I put on some shrimp to boil.
I added in some Old Bay right
into the water to help season the shrimp
while cooking.
Bubba Gump would be so proud.
"Shrimps."

You can load everything right in...
- and after a good whirl ...
You get this!
Yummy, delicious and healthy, too.
Gazpacho is served chilled.
Here is a little tip:
I put all my veggies as well as the canned
tomatoes in the fridge just before I
make the soup. That way everything
is already nice and chilled, and ready to serve.
Serve it in margarita glasses as shown above
for a fun twist.
At the Open House, I served the soup
in small shot glasses garnished with

a cucumber slice.
(sorry I didn't take a pic. BAD Blogger!)
The chilled shrimp look great as garnish,
but the taste plays well with the cold soup, too.
This soup just bursts with freshness...
tomatoes, cucumbers, green peppers,
onion and garlic...fresh parsley.
Summertime goodness at its best.
Best of all.... NO Cooking.
Yep, I named my cookbook well.
The Lazy Gourmet.

Gazpacho
Ingredients:
(6) Cups Tomatoes and Juice - (1) med onion, chopped
(1) green pepper, chopped - (1) lg cuke, chopped (I seed mine)
(2) garlic cloves, chopped - (4) green onion stems, chopped
3 Tbs Lemon Juice- 2 Tbs Red Wine Vinegar
1 tsp Tarragon - 1 tsp basil
1/4 cup chopped fresh parsley - 1 tsp sugar
salt and pepper
