Shrimp Salad

Large White Bowls were meant for

Shrimp Salad.

No really.  It's true.

Only large white bowls with little

knobbies on the side should be used for

Shrimp Salad.

It enriches the taste.  :)

Ok, maybe it's the creamy tarragon

sauce that I make from scratch...

or maybe its the fresh cooked NC Shrimp

or possibly its the chopped fresh parsley....

It could even be the basil.

Or you could say its the fresh garden veggies...

But I am pretty sure it's the

Large White Bowl.

Remember the story I told you

about why I married a man with a truck

Well, this is one of the first dishes

that I made for him over 20 years ago.

Shrimp Salad.

A Southern favorite and a Family Classic.

I have always wondered if he fell in love

with my cooking before he fell in love with me.

:)

Do you also have a Family Classic?

Here is my recipe:

~ One large box of cooked pasta, al dente
~ (1) pound cooked shrimp, peeled
(I add a heaping palmful of Old Bay Seasoning to the
water to add some extra taste to the shrimp)
~ (2) Cups Real Mayo (I like Dukes Mayo)
~ 1/2 Cup Olive Oil
~ (1) palm-ful of dried Basil
~ (1) palm-ful of dried Tarragon
~ squeeze of lemon juice, about 1 Tbs
~ dash of hot sauce
~ 1 Tsp sugar
salt and pepper to taste

I mix the mayo, oil and remaining ingredients
(minus shrimp and pasta) in a bowl, mix well and set aside.  You can adjust the taste according,
 i.e more hot sauce, etc.

While pasta is cooking, I finely chop a large
cucumber, a medium onion (you can substitute green onions), and a large green or red pepper.
( I had green on hand but prefer red for the sweetness)
Finally, chop a small bunch of parsley.

Drain the cooked pasta, add shrimp and add tarragon sauce.  Mix well.

I like to make mine and let it chill

overnight to meld the flavors.

This is always a big hit at Family Events

and Parties.

If you don't have fresh shrimp,

it's okay to use well-drained canned shrimp.

When I use do use canned shrimp, I create

a "Cajun Seafood Salad" by adding in

(1) can each of shrimp, crab meat and clams.

I also add (1) Tbs of Old Bay Seasoning

to the Tarragon Sauce.

Yummi-yummo!

Remember how I served my

In margarita glasses?

This salad is also pretty served in

those same glasses.

Or a cute red dish...

Or, a styrofoam bowl works good, too.

:)

So if you are looking to pull in a man with

a truck - so he buys you chippy blue doors

20 years later,  or you have an upcoming

Family Reunion or Event where you

want to knock their socks off with your

cooking prowess - fix this

Shrimp Salad.

In a Large White Bowl.

  2. You don't know how glad I am that you posted this! My one attempt at shrimp salad was awful. I'm pinning your recipe, but I don't know if mine will taste as good as yours because I don't have a large white bowl or any bowl with knobbies on it.

  8. Barbara,
If I make that salad, will I find a man with a truck? Don't know about the man, but I sure need a truck!! Looks delish! Your blue door is amazing! I do have a blue one, not as fab as yours, and the other side is chippy pink, but my favorite is white one sitting in the corner of my family room.
I've enjoyed browsing thru, loved your trip to CA, (that's where I'm from, and where my family is). I'm your newest follower and would love for you to visit me!
