I can’t help it.
I’ve got Fall on the brain.
I know the humidity outside right now is hot enough to make a dingo cuss,
but I am already in Fall pinning mode… and it’s barely mid-August.
It happens to me every year. I call it “Fickle Seasonal Syndrome.”
Come Spring, I am in full-out planting mode after a cold, dreary Winter.
I can’t get the pansies and the violas in the pots fast enough.
Then, as the last vestiges as Spring wind down, I am chomping at the bit
to rip out the tired-looking pansies and replant with vibrant red geraniums.
After all… it’s Summer.
For a while, my seasonal fickleness is at rest. I am happy to be amongst the
blooming hydrangeas and crepe myrtle blooms… until I walk into a craft store.

It’s all their fault.
I see the plethora of Fall decor, and the autumnal bliss of my heart starts
singing. “Fall is coming, Fall is coming. Get ready. Fall is coming.”
I have a confession. I pulled out one of my Fall decor boxes a few days ago.
I just needed a little peek. I needed reassurance that my pretty pumpkins and
gourds and Autumn beauties were in their place and ready to come out and play.
Who knows. I may start throwing up a few things at the end of the month.
Oh, don’t hate. For once, I’d like to know what it feels like NOT to be the last
one decorating for Fall.
Ready. Set. Fall!
For this week’s addition of Tasty Tuesday, I am sharing
a favorite Soup Recipe.
I call it my “Clean Out the Fridge” Taco Soup.
During the week, I cook enough to “feed an Army,” or so The Hubbs
claims. So, on the weekends – my stove likes to take a little rest. Plus,
my poor bulging fridge needs to be cleared out for the following week.
There really isn’t a recipe. It’s Taco Soup, so of course, anything
Southwestern will suffice. I had leftover taco meat and leftover black beans.
I had some leftover grilled chicken breasts which I shredded. I had
some leftover rice and about 4 ears of leftover grilled corn which I cut
off the cob. But, even if you don’t need to clean out your fridge, this is
an easy and delicious recipe which can be adapted to your tastes.
Whip up a batch of cornbread, and you have a great weekend meal.
(It’s not too bad during the week for lunch, either.)

- 2 lbs. Lean Ground Beef or Ground Turkey
- 4-6 Chicken breasts, cooked and shredded
- (1) Large Can Black Beans, drained
- (2) Large Cans of Diced Tomatoes, not drained
- (2) Cans of Whole Kernel Corn
- (1) Lg Onion, chopped
- (1) Can Enchilada Sauce
- (1) Package Low Sodium Taco Seasoning Mix
- (4) Cups Chicken Stock
- salt and pepper to taste
- (opt) a few drops of hot sauce
- Brown the meat with the chopped onion until completed cooked, and drain well. Transfer to a large stock pot. Add remainder of ingredients. Let simmer for about an hour. Season to taste.
- Serve with sour cream and chopped green onions. Tortilla chips or cornbread is also a great addition. Recipe can be easily doubled.

I know all about feeding an Army, that is why I limit my cooking to three days a week; if I didn’t I would never leave the kitchen! Anyways,this looks so good. I am going to have to try this (pinned it).

Yummy! I love fall too! I make a taco soup as well. I add kidney beans and a packet of HVR dip mix along with the other ingredients you mentioned. Have a great day!

It is hot as hell here in Texas, so I am so ready for fall. Tonight my husband and I had soup, it is such a simple and healthy thing to have for dinner. Your taco soup looks great. I have just starting seeing some fall things hit the stores and it makes me happy seeing them.
