Cranberry-Pecan-White Chocolate Chunk Cookies at The Everyday Home

Once upon a time in the land of Cranberries and Chocolate,

lived a Princess who did not really care to bake 11-months of

the year. But, come the time of Sleigh Bells and Christmas Lights -

out came the magical cookie sheets, nuts and dried fruits -

and chocolate. Lots of chocolate.

 

Bars of white and milk and dark chocolate are chunked,

pecan halves are chipped,

and dried fruits are rehydrated in brandy.

And a few of these berries may have been consumed early. Laughing

 

Yep, Christmas Bakefest 2013 has commenced at

Each year, the decorations throughout our home

take on a different look and feel.  But, not the cookies.

We have some ole’ standbys that – if we do not make -

it’s simply not Christmas.

One of the cookies we make is

Cranberry-Pecan-White Chocolate Chunk Cookies.

It’s such a simple cookie recipe…the standard eggs, flour,

vanilla, brown sugar base…

but the tartness of the cranberries combined with the

sweetness of the chocolate, and that final crunch of

the pecans – creates the ultimate cookie.

better than a container of homemade cookies that’s been

baked with love.

Cranberry-Pecan-White Chocolate Chunk Cookies
Yields 2
The perfect cookie - tart, dried cranberries with sweet chunks of white chocolate and crunchy pecan pieces.

Ingredients
  1. 1/2 Cup butter, softened
  2. 1/2 Cup Brown Sugar, packed
  3. 1/2 Cup White Sugar
  4. 1 Egg
  5. 1 Tablespoon Brandy or Pure Vanilla
  6. 1 1/2 Cups all-purpose Flour
  7. 1/2 Teaspoon Baking Soda
  8. 1 Bar Premium White Chocolate, cut into chunks
  9. 1 Cup Dried Cranberries
  10. 1/2 Cup Chopped Pecans
Instructions
  1. 1) Preheat oven to 375 degrees. Prepare cookie sheets, as needed, if not non-stick.
  2. 2) In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy or vanilla. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chunks, cranberries and pecans. Drop by heaping spoonfuls onto prepared cookie sheets.
  3. 3) Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.
Notes
  1. You can easily substitute the dried cranberries for chopped dates, and the pecans for almonds or walnuts.
